07/29 Dinner : Bulgogi with Green & Yellow Beans

Let me start this post off by saying that I HATE the stove in my new apartment. Its either too hot or not hot enough. I am doing my best to adjust and ruining many meals in the process.

1 lb Bool Kogi (Trader Joe's), sliced
1 pk Green & Yellow Beans (Trader Joe's), bite size
1 Medium Yellow Onion, sliced
Kizami Nori (optional)

Directions:
1.Heat oil over medium high heat.
2.Saute onions (3 min), add beans and continue to saute (3-5 min), til the onions are ALMOST translucent. Remove to a bowl.
3.In the same pan, over medium high heat, sear the Bool Kogi (3-5 min), remove liquid into a bowl leaving beef.
4.Add the onions and beans and continue to saute with beef (3 min), add liquid and mix and reduce (2 min). Pour into serving bowl.
5. Top with Kizami Nori. I served this over a steamed brown rice.

Note: This is pretty much a quick stir fry with very little prep. Try to get a little bit of charring on the beef and beans without burning. Cooking time may vary.

The Fourth Dog

The dogs line up after their walk for a doggie treat. Guess who was also in line? Maya now thinks she is the Fourth Dog. She was too happy when Pan didn't give her a doggie treat.

07/19 Dinner : Sausage, Spinach & Polenta Lasagna

1/4 lb Ricotta Cheese
1/4 lb Mozzarela Cheese (shredded)
1/4 lb Sausage (no casing)
8 oz Marinara Sauce
1 Package Pre-Made Polenta (1/8" slices)
Spinach
Fresh Basil (chopped)

Directions:
1.Brown sausage. Let cool.
2.In a bowl, mix together Ricotta, Basil and a hand full of Mozzarela.
3.Place a thin layer of Marinara to coat bottom of the Pan. Place the Polenta slice on top, then a layer of the Ricotta mixture, then Sausage, then Spinach, then Polenta. Top with another layer of Marinara and remaining Mozzarela.

4.Preheat oven to 375 degrees. Bake Lasagna until cheese is bubbly (30-45 minutes).

Note: I purchased the Cheeses, Basil, Marinara and Sausage from a local Italian deli, which enabled me to get the uncommon quantities used. The Pre-made Polenta was purchased at Trader Joe's.
- Can be made up to two days before use.
- Can be frozen for later use.

Maya : Month 16

Maya has been communicating to us utilizing sign language and baby babble/almost words. She has a ever expanding palate, Spinach Lasagna (Yum Yum), Garlic Fries at Petco (Mmm...), Sausage (Spit...ack...- Fennel Seeds). If she likes something, she will sign language "more".

She has also taking advantage of her mobility. Non stop movement. Like any responsible parent, I like to pass out on the floor from exhaustion. Maya will take time from bouncing from corner to corner to give daddy a hug.

My new nickname for Maya is "Mogwai", from the Gremlins movie. She is cute but can turn into what seems like multi little monsters at any given time. She has one volume right now and it is set on "Loud". If not passed out on the floor, I can be found in the fetal position muttering to myself..."It's just a phase, it's just a phase, it's just a phase..."

Si-Ming aka Heartless

I was inspired to do this quick photoshop movie poster of my brother Si. His nick-name amongst the cousins is "Heartless". He tends to have a indifferent view to most of our situations. I frequently vent to him, which he usually responds with very blunt, unsympathetic, comments(shanks). At least I know he is being honest with me.

The Hat...World Famous Pastrami...Chili Cheese Fries

With the wedding being in Pasadena, it gave me a opportunity to visit one of the original and best Hat locations. As we were waiting in line discussing if I was going to get a Pastrami Dip or Pastrami Burger, the guy in front ordered something I never thought of...

Chili Cheese Fries add Pastrami. The guy just smiled when I ordered and said that it was the best thing NOT on the menu. It was enough to feed two people. We actually had to have my brother Paul help us finish. This is my new favorite item at the Hat.

June Wedding

The month of June has been a blur. Besides the move, this happened to be a very busy month for both Pan and I at work. Sucky Sucky. The end of June also brought Ray and Anna's wedding. With tux in hand, I dropped the dogs off at boarding, packed the diaper bag, loaded the car, and hit the road to Pasadena.

Maya kept Pan busy throughout the whole ceremony. Don't let the cuteness fool you, she has energy to spare and the attention span of...well...a toddler.

I think the groomsmen did a wonderful job. They kept guests happy and hydrated. Performed their parts as scripted. Absolutely wonderful. Amazing. [Pats self on back]

Picture were taken after. Maya was a little doll. No out bursts or crys. Just a steady stream of slobber and snot from cutting teeth.

It was wonderful to have most of my family here. Most we don't get to see until Thanksgiving. Maya got to hang with our east coast clan.

The best part of most weddings? Say it with me...OPEN...BAR. Being a veteran groomsman, I had a few Glenlivets already in my system.

Sipping my Maker's Mark on the rocks, feeling the stress of this past month disappear, I watched husband and wife dance, maybe June is not so bad.
