Open Bottle of Wine

Because an open bottle of wine will become dull and flat-tasting within twenty-four hours, the best way to store unconsumed wine is to decant it into a smaller bottle (to reduce the amount of oxygen it comes in contact with) and store it in the refrigerator. This leftover is best drunk within a week (make sure to bring red back to room temperature), although it may be used for cooking for several weeks or, in the case of white wine, up to a month.
