Orange Soy Ribs


1/4 cup soy sauce
1/4 cup fresh orange juice (+zest from orange)
1/4 cup packed brown sugar, or to taste
1 tsp ground cumin, or to taste
dash liquid smoke (optional)
pinch red pepper flakes (optional)
1 rack baby back ribs, cut into individual ribs

Directions:
1.Put ribs in a large sealable plastic bag.
2.In a bowl, mix together top five ingredients until sugar is dissolved. Taste and adjust seasonings and/or liquids. Goal is balace of flavors.
3.Pour marinade over ribs in bag and seal bag, pressing out excess air. Marinate ribs, chilled, turning bag every few hours. Marinade overnight.

Take ribs out and let stand to get room temperature, 30 minutes. Put oven rack in the middle position and preheat oven to 375 degress.

4.Transfer ribs and marinade to baking dish and arrange ribs in 1 layer.
5.Bake ribs, covered, for 30 minutes(option: 1 hour, if you have the time).
6.Uncover, turn ribs and bake another 30 minutes.
7.Remove ribs from marinade and broil ribs till edges char.


Note: When cooking uncovered, check to make sure the sauce does not over-thinken and burn. You can reduce marinade to use as a sauce while ribs broil. Instead of broiling, throw on the grill to finish.
