Quick Fix : Pizza
Toppings are sometime dictated by what we have to use up. In this case, I had a tomato, avocado & spicy salami. Pizza dough is very simple and easy to make, but sometimes we have to cook and eat on the fly. For $1.09, you can buy pre-made dough from Trader Joe's.
1 Package of Trader Joe's Garlic Pizza Dough
1 Jar Trader Joes Bolognese Sauce
8 oz Shredded Mozzarella Cheese
1 Fresh Tomamto
1 Avocado
5 Slices of Spicy Salami
Directions:
1.Prep dough.
Take dough from package and place in a floured bowl, cover with a damp kitchen towel, and let sit in a warm area for 30 minutes, up to 1.5 hours. This is to let the dough get room temp and rise one more time.
2.Preheat oven to 500 degrees.
3.Grease pizza pan.
4.Stretch dough to desired size and thickness, top with a thin layer of sauce and then a layer of cheese.
5.Bake for 5-8 minutes. Check the bottom of pizza to make sure it has set.
6.Place toppings and place pizza back in oven directly on the oven rack. Cook for 3-5 minutes.
*If the bottom is not set or too thin, pizza will fall through the rack. In these instances, cook pizza on the pizza pan
I used the rest of the leftover topping for a antipasta. Drizzle a little buttery extra virgin olive oil and fresh cracked pepper.

Hi Rob - hope you had a great Thanksgiving. Did you know that Mona Lisa Market in Little Italy sells pizza dough - for not very much "dough", it's really good stuff, and maybe a little closer to you then TJ's. Also, a pizza stone is great for making pizza, as well as using it to heat anything evenly in the oven and is only a couple of bucks - when you're not baking just cover with foil and it'll heat stuff evenly in the oven.

I do go to Mona Lisa for Imported Prosciutto, Coppa, , Imported Provolone and Hot Sopressata fix. I have never tried their pizza dough. I also love their homemade sausage and buffalo mozzarella.
Trader Joe's is our weekly grocery destination and is why I use so much of TJ's in my "Quick Fix" cooking.
