Maya : Week 52...Happy Birthday


Maya turned ONE today! We celebrated with an ear infection and a Garlic Meatloaf Sandwich from Lou & Mickey's. Maya got the ear infection and Pan got the sandwich. I got one heck of a busy week at work and the Y Conference at the end of this week. We do have friends and family coming this weekend to help us celebrate Maya's birthday. Today was also baby Jack's birthday too. Jack is Maya's boyfriend at daycare.

Maya : Week 51


Pan is still in Asia on business. She calls to tell me about the dinners and spas and work, while I am at home with Maya and the Doggies eating whatever is in the fridge and pantry.

One thing I am getting out of this whole deal is bonding time with Maya. In my mind, I was expecting the worse. Endless days of changing dirty diapers and sleepless nights pushing the stroller.

Well, Maya really surpised me. She has been a sweetheart for the most part. Being a person that is all about routine and lists, it was a nice change of pace. Not really knowing what to do next. Letting Maya's mood decide. We even hung out at Petco Park this past weekend. Maya wanted to get a little sun on her toes.

Pan in Asia - Day 2

Home alone with Maya and the dogs yet again. My "Sugar Momma" is off to Asia to make sure them factories are producing whatever it is they are producing...right...more right.


Tonight during her bath, Maya decided that the bath water was not warm enough. As I looked up to grab the wash cloth, Maya let out a "grunt", then a "sigh". She took it upon herself to warm the water with some self made "yellow water". Maya looked up at me as if to say, "Yes, this is just the right temperature" and then proceeded to splash around. Guess who got a second bath?

Maya : Week 50


Maya had a 104 degree temperature twice in two weeks, which resulted in two trips to Urgent Care. The fevers appeared without warning. Thank goodness she is recovered...just in time for Pan to go on a eleven day business trip to Asia. [WooHoo]

03/12 Dinner : Stuffed Flounder


This Stuffed Flounder is found in the frozen section of Trader Joe's. I had picked these up a few weeks ago in a attempt to try some new items. So for dinner tonight I used what I had in my ice box. The asparagus was tossed with a bit of extra virgin olive oil, sea salt and fresh cracked pepper, then oven roasted. I served the Stuffed Flounder on top of slices of polenta that were roasted along side the asparagus. Quick and simple. The Stuffed Flounder was "OK", something I would get again, but not something I would eat every week.

03/06 Dinner : Lemon Soy Fillet of Sole



~Fillet of Sole with a Lemon Soy Vinaigrette
~Roasted Asparagus
~Polenta

This is a dish I used to make a lot in Savannah. Fresh Flounder is best but any light fish will do.

2 6-Ounce Flounder Fillets
2-3 Cloves Garlic, Minced
3 Tbsp Fresh Lemon Juice, Reserve a few slices for garnish
3 Tspn of Soy Sauce
1/2 Tspn Sugar
1/2 Tspn Salt
2 Tbsp Extra Virgin Olive Oil

Preheat oven to 450 degrees.

Arragnge fillets in a baking dish or oven proof skillet large enough to hold them in one layer. In a bowl, combine the garlis, lemon juice, soy sauce, sugar, and salt. Whisk in oil until emulsified and pour vinaigrette over fish.

Bake fish in middle of oven until cooked through and no longer translucent, 7 minutes.

Plate. Spoon vinaigrette over fish and top with reserved lemon slice.

Maya : Week 48


Surprise! I am sick again. Its the same sick going around the office and daycare. My week was filled with hacking and then more hacking. A trip to Urgent Care, Z-Pack and some Codine later...Ta Da...[cough, cough, HACK!].

Maya is her old self again. I think she has been sick on and off for the last 3 months. on Sunday, no cough, no runny nose...Big Smile and a twinkle in her eye. Happy Happy. She has a new thing now. She likes to wave at people. At the mall, she waves at everyone. Only wrist and hand.
